Peanut Budder Cups
Difficulty: Easy Mode
Makes: 24 mini cups and 9 big cups (in the same batch)
You will need:
- 1 cup of Creamy Peanut Butter
- 1/2 cup Confectioners' Sugar
- 4.5 tbsp of Canna-Budder
- 2 cups of Semi Sweet Chocolate Chips
- 200g of Milk Chocolate
Step One: Mix Peanut Budder Filling
Combine 1/2 cup peanut butter, confectioners' sugar, budder and salt until smooth. I'm lazy so I used a Kitchen-Aid Mixer

Step Two: Melt the Chocolate
You can use a microwave or a double boiler for this. Personally I never have any luck with using the microwave so I use a double boiler because I know my chocolate wont burn.
A double boiler sounds complicated, but it's just a heat-safe bowl set on top of a small simmering pot of water. The melting point of chocolate is pretty low so you can just set it on low.
As the water warms up set the heat-safe bowl on top of it and add the other half of the peanut butter, the chocolate chips and the chocolate bars and let it melt. You'll want to stir this occasionally until it's smooth.
Step Three: Layer
Line muffin or mini-muffin pan with liners. Spoon a layer of the chocolate mixture into the cups. To flatten out the chocolate you can tap the pan gently. Set the pan in the fridge for 10 minutes to they set and the chocolate hardens.
If you want to have the chocolate coating cover the entire outside of the cups you can tip the paper cups to have the chocolate ruin up the sides. I didn't feel like putting in the effort for that.
Once the chocolate hardens layer on the peanut budder filling. For this I used two small teaspoons.
Tap or shake your muffin tins to flatten out the peanut butter layer and then top with more of the chocolate layer. Tap or shake the pan to flatten out the chocolate layer and then put them in the fridge to cool and set.
